Beskrivning av infrastrukturen
FOODNUTRI focuses in the scientific breakthrough needed to build a sustainable food system ensuring healthy nutrition, continuous food security, and excellent food safety. FOODNUTRI upgrades domestic raw materials for production of foods and food ingredients by exploiting innovative food processing technologies and provides know-how including tools and methods on food characteristics, physiological responses to food, consumer acceptance, food consumption and nutrient intake of populations as well as environmental and health impacts.
Vetenskaplig beskrivning
The core infrastructures of FOODNUTRI at University of Turku include the infrastructure for Food Processing (Platform 1), Food Characterization (Platform 2), Sensory and Consumer Research (Platform 5). The facilities and expertise at University of Turku include the state of art analytical instruments including high resolution QTOF mass spectrometry, gas chromatography-tandem mass spectrometry, and various chromatographic instrumentations, modern sensory research laboratory as well as analytical methods based on these instruments. Food grade instruments, sensory laboratories and methodologies are available for food development research to support development of tasty, healthy, and sustainable foods.
